    While not as beautifully presented as other dishes here, this has become a favorite around the household.

    A very unhealthy, bacon wrapped meat loaf (using both ground beef and pork) stuffed with cheddar cheese. And two equally unhealthy sides of baked macaroni and cheese, and potatoes au gratin.

    Swedish Meatballs w/ sauce and sides.

    Meatballs:
    Ground beef or ground chuck- 1 to 2 pounds
    1/3 to 1/2 cup of breadcrumbs of your choice, but i prefer planko
    1/2 yellow onion chopped pretty small
    1 egg per pound of beef used
    1 tsp allspice
    1 tsp nutmeg
    an amount of black pepper (to your preference)

    mix that shit up! take the mixture and make balls with it, size may vary but you should aim for the ability to produce 15 to 20 meatballs with it. Cook the meatballs in a tbsp of butter, and a tbsp of anything but olive oil, so sunflower, canola, peanut, veggie oils are all fine.

    Cook for about 15-20 min on med heat so they are cook through, feel free to cover for a few minutes before ensuring you mix / flip them over to cook evenly.

    Take them out of the pan, leaving as much residual oil and beef bits as you can in the pan. Use that pan for the sauce.

    Sauce:
    4 tbsp of butter
    3 tbsp of flour
    2 cups of beef broth
    1 cup of heavy cream (lol)
    1 tbsp Worcestershire sauce
    1 tsp dijon mustard
    1 tsp salt
    an amount of pepper, your decision
    1 tbsp of garlic powder

    In pan you were just using for the meatballs, now without meatballs. Put the butter in the pan, on med heat, to melt. Once melted, add the flour and mix until it begins to brown, this will take a few minutes and is probably the most important part because this cannot be allowed to burn!!!! When you notice the color change to a brown, add the beef broth and the cream and mix. Continue mixing while adding the sauce and mustard along with the seasonings listed. After mixing in, let is sit for a minute and about 5 min after the mixing you should see some simmering. Continue mixing and reintroduce the meatballs to the skillet.

    You might now have a large enough skillet, thats fine, at this point, put it all in a pot.

    BOOM! done.

    I like to eat it with either a pasta (shells, bow tie, egg noodles) but also like to eat it with actual sides too. Here is one.

    Mashed potatoes:
    Looks at all the other U.S. white people in here, "Ya'll, we need to talk. There are memes of us saying that we don't properly season things and thin salt and pepper is spicy and guess what? For some of you, the memes are right!!!!!" *smacks all ya'll with newspaper in an Edna Mode style*

    Red potatoes or yellow/ Gold potatoes are what I use most often. You will know what the proper quantity is based on your family or amount of leftovers you want.
    less than 1/4 cup milk
    an amount of black pepper, Garlic powder, oregano, parsley
    (optional) either crushed red pepper or cayenne pepper - 1 tsp or more for taste
    2 tbsp butter


    LEAVE SKIN ON- but rinse.
    Cut potatoes up into eighths or sixteenths. Introduce to hot water that will eventually boil. Clearly if it is a smaller sized potato you may opt for cutting it into slightly larger pieces to save time.
    Boil for approx 15 minutes or until you can easily cut on in half with a fork against the edge of the pot. Drain the water and put the boiled potatoes into a mixing bowel.
    introduce all other ingredients into the mixing bowl and mads the fuck outta them till you get something skin to paste, potentially a tad thinner. It should NOT have any lumps in it
