Oh Dear... That homemade chili was awesome... but having two bowls of it was a bad plan >.< Not going to be a fun night *proceeds to have acid reflux all night*

 

I have one question. Why aren't you all the way naked? Maybe you get some peeps to eat mac and cheese with.

 

I love homemade chili. I don't use a packet, I mix my own seasonings and add chorizo sausage.

 

My mac & cheese is home made with two different cheeses (Sharp and Longhorn).

Ooh, that is a good idea. I used a packet, mostly because the spice section of the grocery story I go to was under stocked today when I picked up the ingredients. But next time I will certainly give that a try.

 

Honestly there is nothing wrong with using a packet but some seasonings are lacking. I always have to add more cumin and chili powder along with other stuff.

 

Ditto. My trick is to soak dried anchos in a little bit of beef broth until they soften, then blend it into a paste. Garden-picked oregano and toasted-and-crushed cumin round out the flavor. Also, I sauté the onions and garlic in bacon fat. The one sacrilege is to rinse my beans; I replace the lost liquid with beef broth. It's sacrilegious, but my mate seriously appreciates the way it cuts down on the fartiness of it.
